2 or more large corned beef briskets, that's right at least 2 because
you will probably eat one by yourself - Kevin says he does!!
In a large baking dish, lay out the briskets, fat side up, with
the seasoning packet that is usually provided placed in the bottom
of the dish* add 1 cup of water and allow to sit for about 15 minutes*
cover dish with foil and place in a preheated 350 degree oven for
about 1 hour* uncover and reduce heat to 300 degrees and allow briskets
to bake until a golden brown crust has formed* while that finishes,
prepare the sandwich fixins'* get some of that fresh, seeded rye
bread that you got from the bakery, some good Swiss or provolone
cheese and some real, I mean produce department real, thousand island
dressing* remove briskets from oven and allow to rest for 15 minutes*
I recommend slicing across the grain with an electric knife* build
your sandwich but be sure to slice it thin and pile it high but
an absolute must with this is an iced cold beer* some things just
absolutely go together and this combination is made for each other*
I would serve this with an outstanding slaw or thin slice some cabbage
and sauté in a little margarine until good and wilted for
a traditional fare* after hittin' on this, you will understand "Erin
Go Baugh"
