Select good, fresh whole chickens. Doschers and Earthfare have excellent
birds that are iced packed and have an excellent flavor but get
yours where convenient. Wash birds and place on cutting board, breast
side down * using a heavy knife, cut through the backbone from neck
to tail * crack the breast bone and fully butterfly the chicken
* clean inside cavity under cold, running water * pat chicken dry
with paper towel and place in pan * in a small mixing bowl put season
salt, garlic salt/powder, celery salt, pepper, basil, oregano, rosemary,
thyme and lemon juice, (do these in portions that suit your taste)
mix together * add a couple of spoonfuls of good mustard and 1 or
2 cans of chicken broth, combine all ingredients * now mix in about
1 cup of olive oil and blend together * place chickens in a large
zip lock bag or turkey browning bag and pour in marinate * press
as much air as possible out of the bag and seal * place bag in fridge
for at least 6 hours but overnight is better, turning every couple
of hours * remove from fridge and allow to sit in cool place for
about one hour * preheat oven to 350 degrees * place chickens in
a shallow pan, drizzle some marinate over the birds, seal tightly
with foil and bake for about 1 hour * pour remaining marinate into
a pot and add 1 stick of butter/margarine, bring to an easy boil
for 3 minutes and reduce heat * get the coals on your grill going
* remove chicken from the oven and allow to rest uncovered for about
15 minutes * spread hot coals and pull top of grill down, close
dampers and cool off the coals * grease rack and place chicken,
breast side up onto rack and close lid * crack dampers slightly
* after 15 minutes, lift lid and baste chicken with marinate reserve
and turn * close lid and cook for another 15 minutes * lift lid
and baste, then with lid open, turn chicken and baste until you
get that perfect color and crispness that you want * remove from
grill and squeeze some fresh lemon over chicken and serve with your
favorite side dishes.

Debra's Imitation Crab Salad
Get at least 3 pounds of the
good imitation crab at your local grocery store...more is better *
rinse crab and pat dry * shred crab into a large bowl * on a cutting
board chop 2 bunches of green onion & 3 stalks of celery * Add
to crab and toss together * add juice of 2 lemons & toss *
now add 1/3 cup each - wasabi mayo, Marzetti dressing & creamy
onion dressing & toss * adjust the seasoning to your taste,
refrigerate and serve chilled on a lettuce leaf * this is easy and
delicious
