This is my Mothers chicken and it is killer * Wash your chicken
under cool running water and place in a large bowl * in a separate
mixing bowl, mix using a wire whisk, 4 eggs, 1 quart of buttermilk,
juice from 3 large lemons and your favorite seasonings * allow mixture
to marinate in the fridge for at least 6 hours, overnight is better
* remove from fridge at least 1 hour before cooking and stir mixture
several times to help warm * now, using a large, heavy pot, pour
in enough corn oil to reach the halfway point in the pot * using
a cooking thermometer, heat oil to 350 degrees * as oil heats, put
3 plastic grocery bags into one another making a 3 ply bag * empty
2 boxes of Zatarains Fry Batter Mix into bag and an equal amount
of flour, mix these together * add some salt, pepper, garlic salt/powder
and celery salt, mix * place several pieces of chicken(about 4)
into bag but be care to not overload the cooker because the oil
temperature will drop too much and the chicken will be very greasy
( it is better to fry several smaller batches than fewer large batches)
* cook chicken until it floats and is golden brown * remove from
oil and place on mesh screen or paper towels to drain * dust lightly
with salt and pepper and enjoy * this goes great with some red rice,
corn, peas, sliced tomatoes and a cool beverage * give this one
a try and have a happy and safe
